Machine meets my expectations and is efficient. tests over the past week on 100% ibérico bellota cured ham were perfect! same for cured sausage, bread, eggplant etc. for carpaccio, it's better to chill the meat in the freezer, without freezing it of course. otherwise, cleaning is a little more complex than indicated, so use a flathead screwdriver and a 13 mm wrench.
